This for me is definitely one of the best vegetarian recipes in the world. This is absolutely delicious and an easy ratatouille recipe (although not quite traditional) and a must for anyone that loves mushrooms (as I do).
Ready in: 30 minutes
Serves/Makes: 2
500-600g of mixed Mushrooms (Shiitake, button and flat mushrooms are perfect)
1 large onion
4 cloves of garlic chopped/crushed
250ml of stock (either vegetable or chicken)
4-6 fresh tomatoes (chopped)
1. Lightly fry the onions and garlic for about 5 minutes (or until the onions are soft).
2. Add the mushrooms and fry for another 5 minutes.
3. Add the stock and the tomatoes and simmer for approx 15-20 minutes until much of the liquid has been absorbed.
4. This ratatouille should be moist and not wet.
Serve as a side dish or with rice.
This is another ratatouille mixture that is great in a Panini.
