If you have younger children who love to cook, or you want them to eat some more vegetables then this is a really nice simple dish.
My two used to love making and eating this when they were younger.
Ready in: 30-40 minutes
Serves/Makes: 2-4
1 tin of Baked Beans (400g)
1 onion - chopped
1 bell pepper (either green, red or yellow) - chopped
1 large courgette - chopped
1 tsp mixed herbs
Salt and pepper for seasoning
1. Lightly fry the onions and pepper for about 5 minutes (or until soft).
2. Add the courgette and cook for another couple of minutes.
3. Add the baked beans, mixed herbs and cook until heated through.
Don't be fancy about it, serve in a bowl with some nice bread.
