For my money this is the most original and basic recipe and probably the best!
It's the one that closest to a authentic and classic ratatouille recipe that would have been originally created. Some very subtle flavours in here, but it's a very tasty and easy recipe.
Ready in: 20-30 minutes
Serves/Makes: 4
1 medium onion – chopped
3 cloves of garlic – minced
800g tin of tomatoes
2 medium sizes courgettes (zucchini)
1 red pepper – chopped/sliced
1 green pepper – chopped/sliced
Fry the onion in a very large pot until soft, then add the garlic, stirring for a few minutes.
Add the tomatoes, bring to a boil and then simmer, covered, for about 5 minutes.
Add the courgettes and peppers and simmer for 10-15 minutes more.
Remove from heat and let sit, covered, for a few more minutes.
You're looking for much of the moisture to have gone and the vegetables should be nice and tender, if you need to add a little more moisture just add a bit of water.
Season to taste. Serve and enjoy
