This recipe is a slight twist on the original and is an authentic ratatouille recipe for the French today. A delicious one pot meal, that is enhanced with some fresh crusty bread.

Serves/Makes: 4
1 medium onion – chopped
3 cloves of garlic – minced
1 medium to large aubergine – diced
800g tin of tomatoes
2 medium sizes courgettes (zucchini)
2 tablespoons of mixed herbs (either French or Italian)

1 red pepper – chopped/sliced
1 green pepper – chopped/sliced
1. Fry the onion in a very large pot until soft, then add the garlic, stirring for a few minutes.
2. Add the chopped aubergine and the tomatos, bring to a boil and then simmer, covered, for about 15 minutes or until aubergine is halfway cooked.
3. Add the courgettes and simmer for 10-15 minutes more.
4. Stir in the herbs, remove from heat and let sit, covered, for a few more minutes.
Season to taste.
